Parmesan Chicken

At first glance, this recipe had two strikes. One, I'm a huge traditional Chicken Parmesan fan and was skeptical about a tomato-less dish. Secondly, I don't normally use Ina Garten aka Barefoot Contessa recipes, but my mom made this one and JT insisted that I reproduce it the next week. He says it tastes a lot like Wiener schnitzel and it's one of his favorites I have made. But I can guarantee you, it's A LOT easier to make, it just uses a lot of dishes! No big deal. Andrea and Jason also said they liked this recipe.

This is fast, easy, and good for hosting guests. Just make it ahead of time, clean your kitchen, and reheat (just the chicken) in the oven while you're preparing the greens just before serving. I serve the chicken atop the greens and lemon vinaigrette. The lemon cuts the hearty, crunchy chicken nicely.

Ingredients

  • 4 to 6 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 extra-large eggs
  • 1 tablespoon water
  • 1 1/4 cups seasoned dry bread crumbs
  • 1/2 cup freshly grated Parmesan, plus extra for serving
  • Unsalted butter
  • Good olive oil
  • Salad greens for 6, washed and spun dry (buy the bag; makes life easier!)
  • 1 recipe Lemon Vinaigrette, recipe follows

Directions

Pound the chicken breasts until they are 1/4-inch thick. You can use either a meat mallet or a rolling pin.

Combine the flour, salt, and pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs and 1/2 cup grated Parmesan. Coat the chicken breasts on both sides with the flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly. (Make sure they are completely coated with each. Also, use one hand to dip in dry ingredients and the other for the eggs and you won't have breadcrumb paste to peel off your fingers.)

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts. Toss the salad greens with lemon vinaigrette. Place a mound of salad on each hot chicken breast. Serve with extra grated Parmesan.

Lemon Vinaigrette:

  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1/2 cup good olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. (I did not measure, just combined this to taste. My mom used these measurements and I thought it was too lemony and not thick enough. Just me, though!)

Ellie's Grilled Thai Beef Salad

Ingredients

  • 1 pound top-round London broil or flank steak, about 1 to 1 1/2-inches thick
  • 3 tablespoons lime juice, divided
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons canola oil
  • 2 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • 1 1/2 teaspoons minced ginger
  • 1 1/4 teaspoons red curry paste or chili-garlic sauce (check the int'l aisle)
  • 1/2 head red-leaf lettuce, torn (about 6 cups)
  • 3 shallots, thinly sliced (about 1/2 cup), divided, for garnish
  • 1/2 cup cilantro leaves, rinsed and dried
  • 1 cup basil leaves, sliced into ribbons

Directions

Rinse and pat the meat dry. Place in a sealable plastic bag or small glass dish. In a medium bowl combine 1 tablespoon of the lime juice, soy sauce, canola oil, brown sugar, garlic, ginger and red curry paste. Pour half the mixture into the bag with the meat. Add the remaining 2 tablespoons lime juice to the bag. Seal tightly, and marinate meat in refrigerator at least 4 hours or overnight, turning occasionally. Reserve the rest of the mixture refrigerated, to dress the salad.

Spray grill or grill pan with cooking spray and preheat. Grill steak until medium-rare, about 5 minutes per side, depending on desired doneness. JT likes his more medium, so I cooked mine for about 7 on each side. Let rest until room temperature then slice thinly against the grain. Be patient; it's worth it!

Combine lettuce, sliced shallot, cilantro, basil and beef in a salad bowl, reserving a few shallots for garnish. I went light on the shallot, a bit heavier on the cilantro and added corn to it. Add the reserved dressing and toss to coat. Divide salad among 4 plates and garnish with reserved sliced shallots. JT said next time he would love crunchy Asian noodles with it. Sounds good to me!

Perfect Weeknight Salad


Here's a quick, easy salad we love! I always keep a bag of pre-washed, prechopped lettuce on hand because it's easy and encourages me to make more salad. I can use half the bag, reseal, and store in my crisper drawer for quite awhile.

My favorite bag variety is Dole's Hearts Delight and my favorite carton variety is Organic Girl's good clean greens. For this salad, I toss some Asian sesame dressing (Kraft has a great one) with crunchy noodles and a little white cheese. The sweet, crunchy flavor makes it pretty much universal for any meal!

Neapolitan Calamari and Shrimp Salad



Ingredients

  • 4 cups chicken broth
  • 1/2 pound orzo pasta (about 1 cup)
  • 1/2 pound calamari, whole bodies and tentacles (I used scallops)
  • 1/2 pound shrimp, peeled and deveined (buy pre-cooked)
  • 2 zucchini, sliced lengthwise, about 1-inch wide
  • 1 Japanese eggplant, sliced lengthwise, about 1-inch wide
  • 2 Roma tomatoes, halved lengthwise
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 3 ounces arugula (about 3 cups) (I used spinach, too)
  • 3/4 cups chopped fresh basil leaves
  • 1/4 cup chopped fresh flat-leaf parsley
  • 2 lemons, juiced
  • 2/3 cup extra-virgin olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons freshly ground black pepper

Directions

In a large pot, bring the chicken broth to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and place in a large bowl.

Meanwhile, place a grill pan over medium-high heat or preheat a gas or charcoal grill.

Drizzle the fish, zucchini, eggplant, and tomatoes with olive oil and season with salt and pepper. Grill the calamari and shrimp, just until cooked through, about 1 to 2 minutes a side. Grill the zucchini and eggplant until tender, about 4 minutes a side. Grill the tomatoes just until grill marks appear, about 2 minutes.

Add the orzo, cannellini beans, arugula, basil, and parsley to the bowl. Cut the calamari bodies into 1-inch rings. Cut the zucchini, eggplant, and tomatoes into roughly about 1-inch cubes. Add the vegetables and calamari to the bowl with the lemon juice, extra-virgin olive oil, salt and pepper. Toss to combine. Finally, add the shrimp on top of the salad. Gently spoon the salad into a serving bowl and serve.
